his is my healthy spin on a classic, it’s full of immune boosting ingredients, a perfect autumn/winter salad.
The goodness includes: Black grapes that are anti-inflammatory, reduce water retention and have strong antioxidant phytochemicals. Celery that contains plant-based sodium and potassium making it a natural diuretic to help detox and flush your body of excess fluid.
Pumpkin seeds and walnuts are full of zinc and amino acid tryptophan than help promote calming serotonin in the body. And not forgetting the humble apple! Full of prebiotic quercetin – a free radical defender and natural antihistamine.
All together it’s super delish.

Ingredients

π“π‘πž π„π©π’πœ πƒπ«πžπ¬π¬π’π§π 
2 tbsp aquafaba (AKA chickpea water)

1 tbsp dijon mustard
100ml extra-virgin olive oil

½ tbsp maple syrup
Juice
Β½ lemon – juiced
White balsamic to taste
3 celery stalks and leaves
1 red apple chopped
1/4 cucumber chopped
Handful toasted pumpkin seeds
Handful sultanas
120g black grapes halved
100g crushed walnuts

1 baby gem lettuce

Method

First make the mayo dressing. In a clean bowl, mix the aquafaba and mustard, then beat in the oil in a slow, steady stream, until the mixture thickens and emulsifies. Season with sea salt and pepper, then stir in the maple syrup and lemon juice and zest.
Once you have chopped all the ingredients toss to mix with the dressing and season to taste. Add hemp seeds for an omega boost.
